Products: Wrapped, rolled or larded bacon

The pig's belly is salted with its rind for a few days.

After salting,  it is washed with water and white wine and spiced uniquely with  Tellicherry pepper. Then , depending on the product  we want to obtain, we proceed to ligation with or without wood, finally letting it dry for a few days in ventilated rooms, before aging.
